Ready-to-Fill Tart Shells: When They Save Time in a Bakery

Scratch tart shells look cheap because you only count the flour, butter and sugar. The real cost is time: mixing, resting, rolling, lining, resting again, blind baking, and the pieces you break on the way out of the ring.
