Short answer

Buy in bulk when you will finish the pack within about half its remaining shelf life and you have the right storage for it. As a rule of thumb, a bulk pack should last you no more than 8–12 weeks. Below that turnover, the per-kilo saving is real; above it, spoilage, staling and tied-up cash usually cancel the discount out.

Bulk pricing is a discount for taking on storage, risk and cash-flow cost that the supplier would otherwise carry. That trade is worth it only when three conditions are true at once.

The classic mistake is bulk-buying an ingredient for a seasonal item. When the season ends, the discount ends with it.

Example: you fill 400 croissants a month at 20 g of hazelnut spread each. That's 8 kg a month, so a 5 kg bucket lasts about three weeks — bulk is clearly correct. The same bakery using 600 g of pistachio paste a month should not be buying a 5 kg pack, however good the price looks.
